Grapes and percentages: Raboso Piave 100%.
Harvest time: End of October.
Processing: grapes harvested by hand to full ripeness with selection and cleaning of bunches.
Vinification: steel with maceration for 14 days with the addition of enzymes and selected yeast.
Maturation: 30 months in tonneau and in french oak barriques allié TM. Stayed on the lees 4 months -following "rigoverno" with must obtained from the same raisined grapes.
Bottling: april 2005
Aging in bottle:3 months
Alcoholic content: 13, 9% vol.
Wine d.o.c. certified by the C. C. I. A. A. of Venice with certificate of suitability n.264/2005.
Visual analysis: Ruby red colour particularly intense and impenetrable to light.
Olfactory analysis: Very intense, long persistent, excellent. This is a wine with a particulary elegant scent which shows personality, harmony and breed.It is spicy, this smell reminds the aromas of tobacco and coffee.
Gustative analysis: the mouth is satisfied by a perfect balance acid-tannic and a pervasive harmony of toasted flavors and cherries with spirit.
Food pairings: red from game, from rustic and succulent dishes of Venetian cuisine.
